This is the classic Italian gin & bitter recipe: the Negroni.
The floral and soft tones of a Gin marry perfectly with bitter Campari. When topped off with a good tonic, this cocktail makes a very enjoyable aperitif.
Put five ice cubes in a typical Martini glass and add 5cl Gin. Add 5cl Campari. Fill the infuser with orange peel and star anise. Stir gently and top off with tonic.
Garnish with a zest or slice of orange and a star anise.
